Plans, organizes and supervises concession, catering and merchandise activities at the Lubbock Memorial Civic Center, City Bank Auditorium/Coliseum, Wells Fargo Amphitheatre and other facilities as required. Meet with lessees to determine food and beverage requirements for event; Supervise operation of concession activities, control purchase of inventory, and propose types of products to be sold; Manage records and prepare reports on financial status of food and beverage operation; Select, train supervise and evaluate section employees Oversee required trainings for part-time employees; Prepare and administer operating budget related to food and beverage operation; Evaluate food and beverage operations and make recommendations, to improve efficiencies; Perform related duties as required. Completion of a bachelor degree in restaurant management, business administration, or a related field with an additional three to five year’s experience in concession sales, catering, or other large- scale food handling operation; or any combination or relevant education and experience which provides the following knowledge, abilities, and skills: Applicable alcoholic beverage laws and requirements. Methods used in large scale food concession operations. Purchasing and inventory control methods. Management of restaurant operations. Business computers and point of sale systems.
